Sure, food has always been a reason to travel, but, in Goa, when one wants to go on a dining adventure, all roads lead to Miramar, where Miri offers a culinary trip around the world in 12 plates!
Fusion and fun are words that go hand in hand, and for Head Chef Tristan Lopes, they are his mantra when he steps into the kitchen.
“People often think it's wrong to deviate from the original recipe, but I don’t believe that. Nobody’s made the rules, right?” Chef Tristan says playfully as he explains how he enjoys experimenting with recipes.
Creating a fusion of the original ancient recipe with his own unique touch, Tristan enjoys improvising traditional recipes with newer elements, textures and flavours to bring out the best in each dish and make it palatable across different customers that visit the restaurant.
In his most recent venture, he decided to give people a chance to take a tasty trip around the world through their newly introduced food festival called ‘Around the World in 12 Plates'.
Held from September 6 to October 6, 2024, the festival offered guests a passport to sample 12 select dishes from around the globe.
These included, African Peri Peri Chicken, Ceviche (Peru), Dal Gosht with Jeera Rice (Pakistan), Japanese Gyudon, Pumpkin Leaves Miang Kham (Thailand), Sri Lankan Curry with Coriander Rice, Burmese Khao Suey (Myanmar), English Fish and Chips (United Kingdom), Mexican Caesar Salad (Mexico), Turkish Cheese Kofte (Turkey), Italian Gnocchi with Prosciutto (Italy), and Texas Smoked Belly Burnt Ends (USA).
“The purpose of the festival was to highlight our fusion menu,” says Chef Tristan. Cooked with utmost attention to detail and a promise of lasting impressions, it came as no surprise the festival proved to be a big hit.
Some of the best sellers have been now added to the main menu at Miri, claiming a permanent spot- at least until Chef Tristan decides to switch things up again.
In addition to this, Miri also serves delicious cocktails, mocktails and appetisers like ‘Goa’, a bite-sized dish bursting with flavours that represent the region and ‘December,’ a tender beef delicacy that is slow-cooked for hours and is sure to melt in your mouth and evoke a reminder of the must-have kitchen essentials of the holiday season.
Sure, the list of restaurants to visit in Goa is miles long, but Miri consistently surpasses expectations in research, cooking style and taste, checking every box, every single time.
