Recipe: Kichdi
INGREDIENTS
1 cup rice
¾ cup moong dal
½ cup jaggery
¼ cup fresh coconut, grated
1 tbsp pure ghee
Salt to taste
METHOD
Cook the rice and dal together till done.
Then add the jaggery and salt, followed by coconut and finally add the pure ghee just before serving.
Serve hot.
Recipe: Aalu vegetable with hog plums
INGREDIENTS
One bunch of aalu or colocasia leaves
8 ambade or Goan hog plums
1 pinch of asafoetida
1 tsp mustard seeds
1 cup peanuts
4 green chillies, slit
2 cups fresh grated coconut
2 inch ginger, grated
¼ cup jaggery
1 tsp of garam masala (optional)
Salt to taste
METHOD
Finely chop the aalu leaves.
In a pan, add coconut oil and tempering of asafoetida, mustard seeds.
Add the chopped leaves of colacasia and stir well.
Add ginger, green chillies and peanuts. Pressure cook for five whistles.
Once nicely cooked, add the fresh grated coconut, jaggery and salt to taste.
Add garam masala if desired. Mix well.
Serve immediately.
